
Innovative and elegant olive based dressing. An innovative recipe created by the encounter between a selection of olives cultivated by Agraria Riva del Garda and its producer members, and the authorial cuisine of chef Alfio Ghezzi.
Ideal for infinite use in culinary preparations, where a touch of creativity is needed to enhance a meal or a vegetable. The particular consistency and the delicate flavor make it particularly suitable for accompanying and integrating salads, croutons, first courses and fish dishes.
Color: Dark tinge tending to black.
Olfactory sensations: at the opening there is an intense aroma that reminds the olives in brine.
Consistency: granular but not dry.
Chef Alfio Ghezzi grew up in the school of Gualtiero Marchesi, master of the "New Italian Cuisine".
After several important international experiences, he was at the helm of the famous restaurant Locanda Margon to which he brought innovation, style and uniqueness recognized by the conquest of two Michelin stars.
He is currently working on several projects and in his new gourmet restaurant "Senso" at the Museum of Modern Art (Mart) in Rovereto.
